Spice level is one of the most common questions guests ask before visiting an Indian or Pakistani restaurant. At Zahida, our answer is straightforward: we cook at one fixed spice level, which we call Scandinavian spicy.
Here's what that means in practice.
What Is "Scandinavian Spicy"?
Scandinavian spicy sits in the middle ground — dishes are well-spiced, complex and warming, but not aggressively hot. The heat is present but never overwhelms the other flavours. Think bold and layered rather than fiery.
It's a level that works well for guests who enjoy flavour but may not be accustomed to the more intense heat found in traditional South Asian cooking. Most of our guests — including those who don't typically eat spicy food — find it enjoyable and manageable.
Why Do We Use One Fixed Spice Level?
At Zahida, we work with a tasting menu format. This means our kitchen prepares dishes in a specific way, with a consistent flavour profile across each service. Adjusting heat levels per table or per dish would compromise the consistency and intention behind each recipe.
Our approach is to set a spice level that enhances the food — not one that challenges guests unnecessarily — and to build depth of flavour through layering spices rather than simply adding heat.
What Spices Do We Use?
Indo-Pakistani cuisine draws on a wide range of spices, and at Zahida we use many of them — including cumin (jeera), turmeric (haldi), coriander, cardamom, garam masala, tandoori spice blends and szechuan-inspired elements in some dishes. The heat in our cooking primarily comes from chili, used with intention rather than in excess.
What If I'm Very Sensitive to Spice?
Our fixed spice level is designed to be approachable for the majority of diners. However, if you have a genuine sensitivity to spice — or if you're bringing young children — we recommend getting in touch before your visit so we can advise you honestly on what to expect. We'd rather you come informed than be disappointed on the night.
